Tales (and tails) for the New Year from Hotel TerraVina

Taking advantage of the fact that Romané was still off from school, we escaped to London for a few days last week and had a super time. London was heaving with tourists and we found ourselves asking “recession, what recession?” as London certainly seems, from a general overview at least, to be less hard hit than other areas around the UK, with busy, bustling restaurants, full hotels and lots and lots of shoppers all spending- it was a welcome sight to see.

We had great fun…we went to a couple of shows, ate out in a variety of our favourite places, including 28 -50 Wine Workshop and Kitchen and Terroirs, to name just a couple. I spent the day with one of my god daughters, which gave me the perfect excuse of indulging in all things pink and fluffy- Romané and I had a super day with her in Harrods, (don’t think Romy enjoyed the pink, fluffy bits quite as much as me though!) enjoying pizza, eating ice cream and being wowed by the vastness of the toy department.

Meanwhile back at TerraVina, the team looked after the hotel brilliantly- we have had some super guests to stay and some truly lovely comments about the team, all of whom we are very proud of, so it is terrific when the guests agree that they are all very special.

Thus with the New Year come new challenges- the Dining Room at TerraVina re-opens from the 19th January and we are looking forward to putting that on the map. We have been busily redecorating (on going, and going and going, but the results are rewarding) and sprucing here and there and so I have been having fun shopping for the all important essential finishing touches.

Hotel TerraVina says Happy New Year and let’s hope it’s a good vintage…..

Uncle Alan.. this blog is for you!!

I hope everyone had a great Christmas and New Year. We were busy with a double sitting for Xmas day, a slightly less busy Boxing Day and then a good for days in between followed by a busy, fun filled New year’s eve celebration where the hotel gets bedecked with streamers, balloons and gold and silver sparkles and looks very twinkling, pretty and festive.

We had great guests and were so proud of our team, who as always worked so hard for us and overall as is always the case when we de-brief after Xmas and NY, despite the fact we all worked hard, we had a fun filled time with lovely people.

2012 ended up an interesting year where as always many events happened. Gerard travelled around the world, clocking up 90,000 plus miles and his mission for 2013 is to travel even more miles and taste even more wines! We enter 2013 with a burst of energy, exciting plans for the hotel, what with the January opening of “The Dining Room at TerraVina’, our regular, monthly wine events, new, demonstration cookery events and if we can raise the funds the extension to build extra bedrooms and the cookery school- unfortunately the long running recession has bitten us hard and we have had to postpone the building plans but we are hopeful that 2013 could well be the year that the building grows.

We are off to London for a few days of post Xmas rest and relaxation with theatre shows, restaurants and cocktails beckoning and then it is back to puppy training in earnest, the school run and the usual juggling of all the different hats we wear as busy hoteliers, restaurateurs, MD, parents and all the other multi tasking roles we hold.

Thus happy New Year to all of you and we look forward to keeping in touch through the year and hope to see you during 2013 at TerraVina.

Merry Christmas and Happy New Year Wishes

As the festive season is now in full swing, the time to write my blog seems to be shrinking still further- we have had another great two trials in our new,  “Dining Room at TerraVina”- thank you so much to all the lovely friends, guests and enthusiasts who have loved it… we are now taking bookings for 19th, 20th and 21st January, so if you fancy a trip to the forest and some of George’s forest delights then do come and see us.

I have been driving all over the country visiting all of the properties that I now look after- each place is looking beautifully festive and bedecked in gorgeous Xmas decorations. The teams are working hard (Thank you all) and the 10in8 teams are looking forward to a break for Xmas and NY.  I love this time of year, decorating and planning presents and then wrapping them to look beautiful and tempting under the tree… this year our puppy has been “helping” so the tress look a bit wonky and the presents wrapping paper a bit frayed and chewed at the edges here and there!

The TerraVina team are working over Xmas and NY as we are open and busy, busy, busy. Both and Gerard and I would like to say a very hearty Thank you to them all for the loyalty, hard work and commitment they all show to us, not just at this manic time of year but throughout the year. We feel very lucky to have them as our team.

I am sure I have many tales to recount of the past couple of weeks, but as I’m writing this, I am also preparing a speech for an after lunch event I have been invited to speak at, plan the rest of my week around outings, work, school runs and pick ups and dog walking, along with a trip to Santa and Peppa Pig with my god daughter and Romy (he’s far too old for Santa of course and Peppa Pig, but adores Georgia and it is one of the highlights of the year for us to all spend the day together).  So if I’m honest, I can’t remember what day of the week it is today let alone what I did yesterday or last week- it was however a busy, challenging and mostly enjoyable time made even better by the antics of Malmsey, our adorable puppy who at 10months old is getting even prettier, and more naughty and mischievous by the day- we all adore her and I cannot imagine our lives now without her as she makes each day that little bit more busy, chaotic and fun.

Romané is in his final week of his 1st term at school and I am off to Romsey Abbey tonight with him to enjoy the school Carol concert- then I will truly feel festive and that Christmas and all that it truly means is here… thus, to all of you have a lovely Christmas and New Year. Enjoy being with special friends, family and loved ones.

Floods, Tempests and Tempers- just another week at TerraVina…

For those that know me well or for those who read my blog regularly (Thank you for doing so), you will be aware that I juggle a number of hats and that my week is generally fairly hectic, or even, I think it’s safe to say frantic, manic and chaotic most of the time.

This past week or even ten days has been no exception- One of the days, I tried to get as many visits into one day as was possible and thus started out at 7am with a trip to Romsey for the school run, then I went to Reading for a meeting, then onto Woodstook for another meeting, then across to Birmingham and then onto Ludlow, eventually arriving at 9pm ready for a quick dinner and bedtime. Coming home from Ludlow the next day, (I was sensible enough not to drive back again all in the same day), the weather was so bad that the roads in and around the lovely market town were almost impassable and in fact at one point my fellow passenger, Alan Murchison, our Group Executive chef, had to jump out and rescue a poor lady stuck in her mini- she jumped into my car and he jumped into her mini and we braved the torrents and got her safely to the motorway and on her way home- the journey took over 5 hours in horrible conditions.

Home safe, the next day I was minding my own business in a local car park, just about to park when crash, bang and another car had reversed straight into me- no one was hurt and whilst my car was scratched and dented it’s only a car, so no point making a fuss- however the poor young girl who hit me was distraught and so I spent half an hour trying to subside her sobs and the nicer I was to her the more she cried- it wouldn’t have mattered that I had to stay with her for so long calming her down, except that it was pouring with rain and I was soaked to the skin. Eventually she stopped sobbing and I was able to dry out over a cup of tea!

Back at TerraVina that evening for a busy dinner service and the cellar had flooded- we have a pump to ensure it doesn’t flood, but with the excessive rain and high water table in the forest the pump couldn’t cope- thankfully Gerard designed the cellar well so the water hasn’t damaged any bottles, but there was a near tantrum from the Wine Man, but we soon mopped up and calmed him down.

All in the same week, whilst in a meeting, I  had an urgent text from Suzi our super duper GM- it was her day off, so not a good sign that she was at the hotel- I knew there must be a problem, especially when she texted back a reply stating no one died BUT……the BUT was that due to the awful weather- high winds and driving rain, two trees had toppled over and crushed two cars in the staff car park- luckily no one was hurt, but the cars were very mangled. Now we have a battle with insurance companies as even though I mistakenly thought that was why you had insurance, to cover you in the event of an accident, natural occurrence, act of God, but seemingly not as they have been less than helpful to deal with and it makes you wonder why you pay a hefty premium each year.

Apart from all that excitement there has of course been the usual day to day dramas that are part and parcel of hotel life- staff present you with a challenge or three and the juggling just never seems to stop, but that is of course what makes being a hotelier so exciting (mostly!)

If you go down to the woods today you’ll surely find a surprise… The soon to open, “Dining Room at TerraVina” has a trick up its sleeve and his name is George.

I hinted to my faithful blog readers (thank you for reading week after week), that we had a new and exciting project to reveal soon… well I am thrilled to let you all know that we are opening a new, finer dining option at TerraVina, in addition to the hotels’ ever popular, main restaurant, now headed up by Lewis King and his team.

Thus, drum roll please………..We are delighted to announce that with the arrival of our new Executive chef, George Blogg,  “The Dining Room at TerraVina”, will compliment the hotel’s main restaurant and will open from mid January 2013. (we are open in December for some special, pre-opening dates and some of you may well be coming along to those already)

“The Dining Room at TerraVina” will be open on Saturday, Sunday and Monday evenings. The restaurant will offer a nine or twelve course tasting menu comprising of dishes using foraged and fresh produce, exclusively from Hampshire and Dorset, which can be paired with wines specially selected by Gerard and his wine team.  Open for dinner only from 7pm to 9pm and priced at  £72 (nine course) or £85 (twelve course) per head (excluding wines).

Over the past couple of days we have had two ”practice runs”, with some of our fantastic, regular guests volunteering to be our first tasters; the feedback has been brilliant. The menu is innovative, the presentation fun and quirky. There is a real talking point to the whole feast and once the rooms’ refurbishment is properly completed, we think it will be a very different and special place to enjoy and well worth coming down to the woods to play! Exec chef, George Blogg, is a super chap, born and bred in Dorset. He joins us having previously been the sous chef at the 2 Michelin starred, highly acclaimed, Champignon Sauvage Restaurant. Having also worked for two years at another 2 Michelin star restaurant, The Square in London, we are very excited by George and his expertise. We feel very fortunate to have him with us. Besides from his degree in Geology, he also brings a passion and enthusiasm for food which is infectious and we love all of the forest foraged treats he is tempting us with.

A very kind gesture to Hotel TerraVina, which took the wind out of my sails and rendered me speechless!

I was very surprised and deeply touched by a friend of mine last week- her act of kindness rendered me speechless (not very usual!). She completely surprised me with her gift and even now as I recount the story I am still reeling from the shock and surprise…

Sheila West, of SR WebMedia is the lady responsible for ensuring that once I have written my blog and sometimes she gently nudges me along the way on the occasions that I run out of hours in a day and don’t deliver it on time…. basically I write the blog and then Sheila ensures that it gets posted to the web and is there for all to see. She does all the techy bits as I am such a techno phobe and all I do is the nicest part and the best bit of simply writing it.

Quietly and secretly, Sheila has been gathering the best offerings of the blog which I have now been writing weekly (almost) for 2 years and has collated them together into a book of a whole year’s worth of blog posts, which she has actually had published for me, complete with an ISBN number (some technical detail apparently that ensures the book is authentic and properly registered).  The next step is to have more copies printed (everyone who knows me will have one in their Xmas stocking!) and hopefully Amazon will have me too, so watch this space. But as of now, I am a published author of a book I never realized I was writing.

However, no matter which shelf it ends up on, (if any), the bit that stunned me was the act of kindness and the amazing gift that Sheila offered me- what a lovely, lovely surprise and one that touched me hugely. I love writing the blog… I only write if because I enjoy the routine of sitting, thinking and writing all sorts; the fact that anyone reads it always surprises me and now to think that someone has considered having some of the posts published into a book on my behalf is fantastic.

Huge thanks Sheila- you are so kind and really I cannot tell you how pleased I am and touched at such a lovely, thoughtful gift.

A special “Thank You” message for George from all at TerraVina who is our extra special, recent guest…

We often have children to stay at the hotel. Whilst we do not have many facilities for them to enjoy, other than the outdoor pool and garden in dry, sunny weather, there are of course the wonders of the forest and Paultons Park and Peppa Pig on  our doorstep! They all seem to enjoy the relaxed and friendly atmosphere and we have fun hearing all about their days out and about exploring the area.

Many of the children are so well behaved that we remark on their good manners, their behaviour and what a pleasure it is to look after them. They are all lovely, but recently one little boy struck us all as being even more special than the rest.. His name is George and whilst he was with us he was the most positive, sunny natured, smiling little boy. All of the team have unanimously said that he is super special and he was an absolute pleasure to have to stay at TerraVina.

Thank you George for being such a star guest and HUGE thanks for our thank you card which has pride of place in our office

We hope to welcome you back again and again and do bring Mummy and Daddy as they were lovely too!

Hello again- Hotel TerraVina is back writing the blog…

For those who follow my blog on a weekly basis you will have noticed that there has been a two week lapse…. I would like to excuse the lack of x2 blogs by saying I have been relaxing somewhere hot and sunny, but sadly this is not the case as the only reason that there have been two weeks missing is because time ran away and despite the clocks going back I seem to have lost two weeks and don’t have a clue where the days went.

Currently there are so many plates spinning in the air that I feel like shouting- “STOP”… I’d quite like to jump off the merry-go-round. However, I can’t spare the time so onwards and upwards for the time being at least.

I cannot even recount the last two weeks events…. Not because they are top secret but rather because I can’t remember all of the exciting details as the days rushed by in such a fast pace. However some positive highlights, (unfortunately, there have been plenty less exciting and more stressful moments too), but back to the positive….. we have a new kitchen team, headed in the main restaurant by Lewis King and a new Executive chef, George Blogg who will head up the new Dining Room at TerraVina, which will be our finer dining restaurant, open from mid December on a Saturday, Sunday and Monday evening for dinner only.

Lewis replaces Neil Cooper who has left for new adventures including the possibility of opening a restaurant of his own… as is often the way, many of the team have followed Neil and are scattering to other restaurants around and about and one of our favourites, Dan is taking a sabbatical and training as a carpenter, but he promises to return to us in December, for what we hope is a long while, but certainly won’t be until the early New Year at least.

Lewis arrives to us from The Black Bull in Cambridge and George has been poached (there are advantages in being the MD of the company!) from 10in8 Fine Dining Group, where he has been with us for the past 8 months, having previously been the sous chef at the much acclaimed, Michelin 2 starred, Champignon Sauvage Restaurant… we are thrilled to welcome both George and Lewis and the rest of the new team.

Please keep an eye out for further details on the exciting developments that are planned  and we promise to keep you all posted via the blog, the website, Twitter and Facebook and of course personally when we welcome you back in future weeks and months

Hotel TerraVina shares dog training dilemmas …

The saying “Never work with children or dogs” is so true. I love children, especially my own, adorable son and equally I love animals and most especially dogs, particularly our own puppy, Malmsey. However, at eight months old, Malmsey (yes, she does have a wine name too- she is named after a style of Madeira wine) is becoming a troublesome “teenager” and no more so than when we go to our weekly puppy training sessions. Now, I must admit to the fact that whilst I am organized and well able to multi-task and manage a business with all sorts of staff and personalities, of which, now we are merged with 10in8, numbers a considerable few, BUT when it comes to managing a willful, mischievious puppy I am lost, no less because I have dreadful hand and eye co-ordination; in these trendy times they label it dyspraxia; when I was little and at school, I was just labelled clumsy and everyone was aware that certain tasks took me longer than my peers to master and some tasks I just never got to grips with… bats and balls are especially trying!

Back to the puppy training- I am hopeless. I cannot master having to hold a dog lead, a clicker (training aid), nibbles to lure her to listen to me and walk and talk and concentrate all at once and the ensuing carnage both frustrates, annoys and provides entertainment all at once to various other members and trainers within the group….. the other puppies and dogs are all so much better behaved and listen and act upon commands effectively, whilst Malmsey and I are all over the place and cause chaos in our wake! It doesn’t help that Malmsely too has been diagnosed with slow hand and eye co-ordination and she has the attention span of a gnat. It has got to the stage when next week, after a 6 week beginners course we will all be assessed fro progress… the only positive that they will be able to note is that Malmsey is very pretty and has an adorable nature as her progress is fairly haphazard on the focused tasks. Thus I have been taken to one side and it has been very kindly suggested that rather then re-enrolling on the next course, I should instead have some further 1-1 session with the dog trainer, we do already have some of those and they are easier for us both to manage, so we have readily and gratefully accepted and are putting a positive spin on the whole saga- it could have been worse, we could have been expelled for bad behaviour and really if I’m honest things can only get better.

Meanwhile, at home the puppy is turning into a delinquent as she is chewing everything she can get her teeth into whilst she is teething…. Her particular favourite are door mats and we are on our 4th and counting. She takes no prisoners with whicker baskets and dog beds too and is quite partial to the edges of tables and sofas too….. a friend has suggested a tiny smear of chilli powder may surprise her enough to stop her but if any of you have a top tips then do share.

Whilst at home there is puppy chaos, at TerraVina we are calm and ordered and it is a very welcome respite as a puppy free zone! We have some lovely Mellow Autumn breaks, offers and events planned for the forthcoming months and as always we love to keep seeing so many returning guests and familiar faces

Hotel TerraVina spends a few days in the Emerald Isle and is bowled over by their friendliness and the Guiness!

I  must confess that Gerard and I have never managed to visit Ireland before and so it was with great pleasure that we accepted an invitation from our dear friend, Mary O’Callaghan, President of the Irish Guild of Sommeliers, to visit Dublin and be involved in the judging of the Best Sommelier in Ireland Competition- from beginning to end we had a super stay and we were bowled over by the warmth of hospitality, the friendliness of everyone we met, be they hoteliers, shop keepers, bar tenders or fellow pedestrians in the busy streets- everyone was so warm, charming and welcoming…. In fact I have decided that I could easily live in Ireland, (I’ve only been to Dublin thus far, but we are keen to now visit the West Coast too) and so I am working on convincing Gerard that when we win the lottery (or the Irish Lotto!) we should invest in a Dublin flat and we can become honorary Dubliners…… Gerard loved the Guiness and I could learn to enjoy it I’m sure but I probably need a drop of blackcurrant in it to make it just a little sweeter for me to adopt it as my favourite tipple.

Thus many thanks Mary and all of your colleagues for ensuring that we had a hugely enjoyable trip- the competition was excellent too and the best candidate won and will be a great ambassador for Ireland when she travels as a candidate to Tokyo to compete in the World Championship.

I must congratulate Laura Rhys our head sommelier too… not only did Laura complete the recent Bordeaux Marathon…. That’s the one where you get a little drop of wine at every kilometer completed I think… I’ll have to check that with Laura, but what a lovely way to run a marathon with a drink with almost every step and Laura also recently won an Award for Excellence, from the Academy of Food and Wine Service, so we are very pleased for her and very proud of all her recent achievements…. Well done!

For those of you who read my blog each week, (many thanks to you all), just an update on Sophie and her snails… Aylesbury Escargots is going from strength to strength and George the “king” of snails is very busy… Fortnums are stocking her products, she has been interviewed by a number of the National newspapers and TV and radio beckons… life on  the snail farm is very hectic and busy and we are all thrilled that all is going so well.

I will have some exciting news very soon regarding developments at TerraVina- I know I’m teasing, but not quite able to divulge the news just yet so watch this space.
