The Hotel TerraVina Blog

Hotel TerraVina goes gaga over Lady Gaga…

I now know the old saying that “if you think a policeman looks young, it means you are getting old” is true; not because I have noticed lots of young policemen lately but more because simply everyone I seem to encounter appears to be so  much younger than me….. teachers, hotel managers, people in all sorts of high flying careers just seem too young to have got there yet.  This fact is a strange one to me as after all, I was only 21 when I became a hotel inspector, which at the time was very young to hold such a position and so I always prided myself on not judging other young people in positions that were generally held down by their elders.

However, I have concluded that I am just getting old and beginning to suddenly feel “grown up”. Gerard and I (he’s ancient compared to me!) took Romané to a concert and the TerraVina team thought it most amusing…. Old people go to concerts too…. yes they do they chimed, but not generally to Lady Gaga- well I can safely say that we weren’t the oldest there (not far off though!).

We were in the seated area… well us oldies need to have a seat to rest our weary legs, but actually we stood throughout the most amazing, brilliant and very clever concert as all the rows in front of us were standing up so we had to too in order to see anything (actually our eyes are going too as we couldn’t see more than a dot on the stage, although the big screens helped). However, we danced, waved our arms and knew all the words to many of the songs- Romané pretended we weren’t with him I’m sure when we started to tap our feet to the support band The Darkness (we remembered them from their first  time round- they’re no spring chickens either!)… however, the point of the evening was Lady Gaga and wow she was impressive- her energy and stage presence was incredible. Her voice is fantastic and her costumes bizarre but amazingly clever- we had a fab time and loved every minute of it… I just wish I was still young enough (and brave enough), to be like so many in the crowd who had dressed up as Lady Gaga lookalikes.

We don’t go to concerts very often but I think our “street cred” has risen a notch or two with the team as they were very impressed that we had enjoyed it al and don’t think of us as being quite so ancient now!

Till next week

“Albino” deer, black squirrels and snails… all in a day in the life of Hotel TerraVina and Co

I am writing this week’s blog in a different venue- not at TerraVina as I usually am, but instead at one of our “sister” restaurants, Paris House, in Woburn on the Duke of Bedford’s estate. For those of you wondering why we have a “sister” restaurant, it is because since the merger, over the summer, with the 10in8 Fine Dining Group, we have the added benefit of having a number of fantastic restaurants within the group, which I have to visit regularly in my new role as MD.

Thus whilst at Paris House, where I was treated to an impromptu lunch sitting at the magnificent Chef’s Table, in the heart of the kitchen, and a more glamorous perch you will be hard pushed to find, as it is bright red leather banquette seating shaped in the form of a sort of scallop shell….. I felt like a mermaid! Lunch was a delicious sweet corn chowder complete with plump mussels and razor clams and a very clever afternoon tea dessert which was truly scrumptious, very clever, quirky and fun… especially the bone china tea cups and tea pots.

However, I digress, whilst at Paris House, (before my lunch), I was gazing momentarily out of the windows across the acres of parkland and spied the deer which freely graze……there was a pure white one amongst the pack. Not sure if deer are called albino if they are all white or are they white hart? I have to confess to not knowing very much about deer except that they are very beautiful and graceful…. Then no sooner had I spied the deer when a black squirrel scampered across the drive and up a tree; who knew there were black squirrels but apparently the Duke’s land is a haven for them. Just to continue my animal theme, well the Duke does own Woburn Safari Park, so I suppose it’s relevant, the Aylesbury Escargot Farm, who supply snail meat and snails eggs to us tand who we have helped to promote in  recent weeks is going from strength to strength and was even featured on the BBC Oxfordshire broadcast this past week. Fortnum and Masons are now stocking both their snail meat and their Escargot pearls, both of which are delicious… I love it when a plan comes together…..well done Sophie, Mike, Abby and all their team

Which is why, (when a plan comes togther), I am equally delighted to tell you all that we have had Alan Murchison cooking with us all week, along with George Blanc, who is an exceptionally talented chef and who is truly lovely and one of Alan’s protégé ….. they were cooking alongside our own head chef, Neil Cooper  and team and have devised a new, vibrant and Californian influenced menu, filled with quirky touches, beautifully presented and very cleverly executed dishes and I love them all- (the dishes not the chefs!) thus this week it is fair to say  I have eaten very well and my waist line is suffering ….. oh the joy of stretchy trousers with elastic waists!

I can’t carry on writing now as I have another round of desserts to try, with the chocolate tart, with caramel sauce and goats milk ice cream being my current favourite.

Till next week

Hotel TerraVina loses a week….

Every week just before my Wednesday deadline I write my next blog and post it… I have been doing this religiously now for nearly 2 and a half years. Each Wednesday used to come round with relative speed but this week, I’m not quite sure what happened. One day it was Wednesday and then today was Friday. Did I sleep round the clock and miss Wednesday and Thursday? Where did the past week go?

Alarmed that I seem to be losing chunks of time at an alarming rate, I thought I would back track and double check:

Monday was a blur of meetings, dentist appointment for Romané before going back to school, school uniform fittings and general going back to school activities. Team building and development meeting ended the day.

Tuesday was a blur of back to back meetings, cinema trip (Batman The Dark Knight Rises- I didn’t fall asleep which is what usually happens when Romy and I go to the cinema! It’s not the quality of the films, rather that the rarity of sitting still is so novel it relaxes me into a slumber)

Wednesday up early on the road and off to The Bear in Woodstock for back to back meetings- home for dinner by 7.30pm and then on switching on my laptop I lost the will to live as all of the e mails that had accumulated over the day (no signal in Woodstock) needed to be actioned- all 100 plus of them

Thursday rude awakening at 6am as it was new school start day. Flurry of activity and excitement and nerves for mum but thrill for Romy. He had a brilliant day, but I didn’t get to collect him or go to the 1st parents event at school to meet the teachers, as GB and I were in London at The Innholders Hall in the City- opposite the church were Dick Whittington is buried (as is his cat- they found the skeleton of a cat to prove it). GB was making an after dinner speech to an illustrious group of elite hoteliers, all of whom are Master Innholders – it was an honour to be invited and to be in the same room as some of the iconic figures of our industry and it really was a roll call of impressive names and personalities. Home in the wee small hours and oh joy, the alarm clock at 6am again… I am sure I didn’t even get to go to sleep

And thus it’s Friday – I still am playing catch up with e mails and my to do list.. so long now it’s more of a novel than a list. The day has been crammed full of meetings, interviews, urgent actions and team conferences. School pick up, after school swimming and then back to the hotel for dinner with some lovely hotel friends

Thus another week has flown by and I’m not sure where the days went- work life balance is my new buzz word, if only I knew which bit to balance first. We are off to see Lady Gaga tomorrow night and frankly at this moment I feel a bit gaga too!

Apologies for the late posting but the days juggled themselves into a bit of a blur. I’m hoping to do better next week as my school report should read.

Hotel TerraVina wishes all of the Paralympic Athletes the best of luck and best wishes for further great games…

Following on from the undoubted success of the London 2012 Olympic Games, TerraVina would just like to wish great success to the Paralympic Games which start this evening with the highly anticipated opening ceremony.

Whilst the Olympic Games are a truly magnificent affair and show the world’s best athletes in the best possible light, I always think that the Paralympics are truly what the Games are all about- the paralympic athletes are truly amazing. They show great courage, tenacity and fortitude in very difficult circumstances, be they disabled through birth, accident or terrorist strikes. They are remarkable people, incredible athletes and so absolutely deserve the title “Super Humans”. Through their achievements we should all take heed and remember that success in life is worth the fight, the hard work, the commitment and the ambition and that there are always those who are less fortunate than us, but who with a determination to succeed can aim for dizzying heights of success and prove that no one should be written off and nothing is impossible…… there is a lesson to be heeded by us all.

On a different note, sadly the school holidays are nearly over (I hear many parents breathing a heavy sigh of relief), but actually I am always disappointed when the school holidays end… the lazy mornings with leisurely family breakfasts are almost over; the morning dog walks together can only now be at the weekends and school shirts have to be ironed. The alarm clock will spring to life at 6am and suddenly life takes on an urgency again- firstly to get to school in the mornings on time and then to arrive back at school in the afternoon to be at the school gate for collection on time- I prefer the gentler pace of school holidays so roll on the half term!

Snails and Pearls…. TerraVina enjoys a feast of flavours at the launch of Escargot Pearls at Paris House restaurant…

It does sometimes get a little confusing when I am juggling wearing my many “hats”. One moment I am MD of the 10in8 Group, and then later in the day, I am back at Hotel TerraVina dealing with guests requests, running the kitchen pass or cleaning the hotel toilets… the days are certainly diverse.

This week I was wearing my Managing Director’s “hat” on Wednesday, when the 10in8 Group hosted a fantastic launch party at our Michelin star restaurant, Paris House, on the Duke of Bedford’s magnificent Woburne estate. The reason for our involvement being that we are supporting a local, artisanal company, Aylesbury Escargots, with the launch of their fabulous, Escargot Pearls.

I did not know very much about snails, (nor given them too much thought if I am honest), previous to my meeting Sophie and Mike Wharton, the charming owners of Aylesbury Escargot… however, Sophie and Mike are such lovely people and Sophie’s story of how they started breeding snails and producing not only delicious snail meat, but more interestingly, the Escargot Pearls was so fascinating and Sophie so captivating, that 10in8 couldn’t help but get involved.

Phil Fanning our head chef at Paris House subsequently worked on  various cures to preserve the pearls (snails eggs) with Sophie and developed a number of delicious recipes which included them and so it was that they were launched with great success – they will soon be available in Fortnum and Masons and will be appearing on a Michelin star dining table near you very soon no doubt. They are a truly unusual but delicious natural product with a distinctive flavour and texture and work very well with many foods, especially braised and strong flavoured meats and delicate dishes such as scallop cerviche with citrus based cure or sauce too.

If you would like to learn more about Aylesbury Escargot and the Escargot Pearls then please don’t hesitate to contact me directly and I can give you all the details. In the meantime their website address is: www.aylesbury-escargot.co.uk Here is a link to some further information and a local news report about the pearls, VIDEO: Snail eggs on the menu for those of you who are keen to learn more about Sophie’s project and George the giant snail….

Pride and Joy post Olympics…….Hotel TerraVina celebrates Team GB’s success

Bravo Team GB- what fantastic sporting achievements were made during the Olympics and it has to be said that Great Britain did a super job of hosting the Olympics- when Sir Steve Redgrave passed the flame to the young Olympiads of the future and each one lit an area of the truly magnificent, spectacular and beautiful cauldron, I had goose-bumps and did feel very proud to be British. For the two weeks of the Games, London sparkled, the whole country basked in glory and the Games makers showed how fun loving, hospitable and welcoming we can be as a nation- Well done to them all. Even the weather played its’ part and the sun shone down and ensured that not one day was marred by any wet and windy conditions.

Last week I was cross about aspects of our recent French trip and I mentioned so in my blog… I was reprimanded by one reader for my rant and so this week I am determined to be my usual sunny, good natured self (Gerard is wondering who that is, as he doesn’t believe he lives with that version of me!) But actually, it is easy to be positive as we are all still enjoying the feel good factor that the Olympic Games created. Watching the closing ceremony was fun…. Who would have thought that we would all still be singing along to the Spice Girls in 2012, or that we could all still laugh so at the Batman and Robin sketch from Only Fools and Horses, probably one of the best comedy shows of all times (along side Fawlty Towers of course). The closing ceremony was just as memorable as the opening one, but albeit very different in style- in fact, I think I preferred the closing one out of the two… the highlight for me was Eric Idle singing “Always look on the bright side of life” – it’s one of those songs that can’t fail to ensure that you are left feeling upbeat, positive and happy.

The week since then has been a happy, fun filled, hectic and frantic one as usual with life returning to normal post Olympics… let’s hope that we can keep hold of the legacy of joy and pride it has left us and harness this for the future as we head into the winter months and ….. Christmas round the corner. Guests are already requesting menus for Christmas day and New Year’s eve- oh my, August isn’t even over yet!

Service a la francaise… no thanks! Hotel TerraVina hops across the Channel and is disappointed…

Due to family illness, Gerard’s mother is 96 years old and has not been well recently, we found ourselves having to hop across the Channel for a family visit. Usually we enjoy visiting and whilst not so far away, (we were only travelling to Lyon) it always gives us the sense of a different culture… however, right from when we arrived at the airport we were struck with the poor service that is begrudgingly offered.

We flew EasyJet… not by choice, but because the flights were available and the times suited. The ticket prices weren’t cheap and by the time baggage and speedy boarding was added on it was certainly not a discounted airline price; however, the attitude of their staff on the ground at check in certainly makes you feel like you are cattle fodder and they go out of their way to ensure you have the most stress and most inconvenience possible….. it got no better in terms of customer service when we arrived in France- a walk from the plane into the baggage collection area which felt as though it was almost as long as to have walked from the UK; easily 15/20 minutes.  Is that acceptable at an airport? Personally I don’t think so.

Airports aside the “service”, (I use the term very loosely), we encountered in Lyon was mostly truly appalling. Many of the staff in shops, restaurants and in taxis were happier by far to say “Goodbye” rather than “Hello” and few made any effort to be helpful, friendly or have any pride in their jobs…. I suppose we noticed such bad manners and lack of care because we are in a service business ourselves, but people just seem so accepting of poor service and that seems so sad. We did find a few happier souls who did smile and were more helpful but it truly was a handful.

The icing on  the cake for the trip was at the airport when we were flying home… they have created a terminal especially for EasyJet customers- with minimal seating, no refreshments, no air conditioning (and probably no heating in winter). You can only check in exactly 2 hours before (but you wouldn’t want to arrive early anyway) as you are merely herded into what is essentially an airplane hanger- this is 2012 in a civilized country- are such conditions acceptable when you’ve paid over £600.00 for airplane tickets? Even when you have checked in, in our case by a surly chap who made three phone calls whilst dealing with us at the desk and who showed such a lack of interest in the customer that his arrogance was breathtaking. However, when we passed through to departures, the situation was even worse- so few seats that elderly people and mother’s with babes in arms were forced to stand or sit on the floor- we were all crammed in and the whole area was dismally inadequate for the numbers of passengers passing through- rarely was I ever happier to return to the UK, which let’s face it isn’t so great in many aspects either, but on the evidence of this French trip we are oh so much better.

Apologies for the rant this week, but the reason I’m so stirred up by the poor service we received is that despite the fact that our team work their socks off, always try to give their best and offer guests the best service they possibly can, sites such as Trip Advisor allow people to have a voice which is often nasty and unfair… people can complain about the colour of the walls and the fact they didn’t like the organic, local lavender products and that if they wanted a hand made, large sized, individually wrapped ginger bread dog, there was a mini bar charge… how do people think we pay the staff, the not inconsiderable rates, the mortgage and all the other overheads the hotel incurs if we don’t charge for items consumed… our team give so much of themselves and it really rankles when you visit places such as our recent French trip and others don’t and no one seems to notice, care or be bothered by the fact that they are treated in such an ill mannered and uncaring way- well I do care and hence my frustration when our team are so nastily complained about- thankfully it’s not often and mostly we have lovely guests who appreciate all they do and how hard they work.

Hats, High heels and sunshine at the New Forest Show…

The ever popular annual New Forest Show took place on our forest doorstep last week; it was a triumph and the sun shone brightly for the whole 3 day event. The Queen and Prince Phillip ended their Diamond Jubilee celebrations at the show on Wednesday and on Thursday, Ladies Day, Hotel TerraVina were the proud organizers of a Laura Rhys tutored wine tasting, which was immensely popular. I judged the Best Dressed Lady competition along with Vivien Sheriff, hat maker to the Royals, who judged Best hat and Richard Frampton, a charming and very jolly chap, who judged Best Dressed couple- Ladies Day was sponsored by Granite Transformations, a Lymington based business who we have worked with on many previous occasions. Our very own Mandy Pearce, our Business Development lady was one of the main organizers of the Ladies Day Event and she did a brilliant job.

In the same week, we celebrated our 5th Birthday with a fantastic cocktail party, organized by Tanguy our assistant sommelier, which was greatly enjoyed by all- we had Pisco Sours, Old Fashioned, Brambles and Grey Goose Fizz to name but a few, which went very well with the delicious home made pizzas and empanadas that Marcelo our Chilean Sommelier, (he is also a trained chef), made for the evening- to go with the home made ice cream and cones (with all important sprinkles!) we had Lemontini and Espresso Martininis along with a number of other Whisky based cocktails such as Whisky Sours- all were delicious and ensured the evening went with a swing.

This week is a little calmer, but no hats and high heels!

The sun has got its hat on and the guests have come out to play at Hotel TerraVina…..

I am back from holiday and by popular demand I packed the sunshine in my suitcase and brought it back to the UK… what a difference some sunshine makes. The hotel is busier, the phone is ringing off the hook with people making bookings, guests are happier and people are just generally more smiley- I LOVE the sunshine as it makes the world a better place.

Terraces, roof terraces and patios have all been popular choices around the hotel and the outdoor pool has suddenly come to life, with guests lazing by the poolside, dipping their toes in and then taking the plunge and floating in the warm water on the pool beds- lovely! I’ve never actually swum in our hotel pool- ridiculous I know, but there just never seems to be the right moment, so I only ever get to dip my toes in.

On Sunday 29th July, we are celebrating our 5th Birthday (a couple of weeks early but never mind, the date worked better) and are holding our annual cocktail party, which is always full of laughter and fun and is really what TerraVina is all about and what we do best… a relaxed, chilled out and fun venue where guests feel comfortable and at home- it’s all we’ve ever strived to be, a much liked hotel and so 5 years on, we are thrilled to continue welcoming back so many guests who love the place for all the right reasons and of course the main reason TerraVina is so special is thanks to our fantastic team, headed by Suzi, who is simply a gem in a very special mix of people. There are still a very few places left for the party, so if you are at a loose end and fancy joining us for a great event then do give us a call.

I am pleased to report that both Gerard and Malmsey survived my holiday and in fact both looked very well… however, Malmsey has been poorly since and is off to the vets tomorrow for an operation. She’s been chewing too many twigs… I am on paw holding duty, as Gerard is wine tasting in France and Romy is off on an adventure packed holiday in deepest, leafy Dorset- I’m judging at the New Forest show this week too; best dressed lady at the inaugural Ladies Day event… no pressure on me then! I’ve been worrying for days as to what I should wear… I can’t judge best dressed lady and not look snappily dressed myself… maybe I need to go shopping!!!!

Till next week and do enjoy the glorious sunshine

Sunshine and Showers – Nina is AWOL and Gerard is at TerraVina home alone!

I am writing this from sunny, warm and glorious Menorca. My days are filled with decisions…. Which sun lounger shall I relax on, what cocktail shall I sample, shall I have a swim or just be lazy and lie here like a lounge lizard and where shall we go to dinner tonight… too many decisions to make whilst the sun is shining, so instead, I will just close my eyes and drift away- bliss!

Meanwhile back in good old Blighty the rain is still falling and the grass is getting longer, lusher and greener! Reports from home suggest the puppy is well and whilst missing us all, she is bearing up well with lots of cuddles from Gerard. He has given up on the washing machine, but I can’t say I’m too surprised about that…. after all if its not wine themed, wine related or associated to wine, Gerard isn’t interested anyway! As for the hotel, Suzi and the team are managing magnificently without my help. I am truly worried that I am becoming obsolete and redundant- will they ever want me back?

It is lovely to be AWOL… actually I did mention I was going to be away a few days (well ok, I may not have mentioned 2 weeks), but now I am here and trying to sit still and relax- how do you do that relaxing thing- it’s been so long ago since I last did “relaxation” that I’ve forgotten how to and actually I am looking forward to getting back to all the excitement, the challenges and work!! That can’t be right… I’ll just reread that bit. Holidays are super duper, but I will be ready to arrive home and slip back into my routine with Gerard and the pup safely at home with us too.

‘Till next week
